Stéphane Carrade

Stéphane Carrade, a leading figure in South-Western gastronomy, is joining the Villa Navarre in 2019, with a new restaurant, “Le Bistrot Ruffet”, in which he is putting his love of the land of his childhood into practice.

He is originally from the village of Borderes-sur-l’Echez, near Tarbes, in the Hautes-Pyrénées .

He trained at the Lycée Hôtelier de Talence, worked in several prestigious addresses, including a long stint at Jean Bardet, a two-star restaurant in Tours, where he was promoted to sous-chef at the age of 28.

After arriving at the Skiff Club on the Arcachon side in July 2016, Chef Carrade has achieved a tour de force by obtaining 2 Michelin stars in less than four years, after having won his first star, just a few months after opening this restaurant in the Haiitza hotel.
